Kitchedi is a nutritious dish that mixes staple ingredients, like rice and lentils, with tasty vegetables. It's is eaten all over India, called by different names in each region and made with various spices. Traditionally it's made with plenty of ghee— perhaps because it is a comfort food, especially in the cooler months. We figured it would be perfect for this confusing Pittsburgh spring! A cucumber/onion raita, made with yogurt, offers a refreshing complement.

While you're preparing the meal kit, you can snack on Bhel Puri, a popular Indian street food! The ready-to-eat mix contains savory puffed rice, fried bread (puri) & crunchy sev (tiny crunchy chickpea noodles). You'll add in some onions, peanuts and potatoes flavored with a spicy date/tamarind sauce, to make it a full dish and bring some flair to the table.
